Mushroom Pizza

This makes a 10 to 12 each pizza.  Homemade pizza dough is best. Second best – buy pizza dough from a pizza joint, Third best – buy fresh dough from a grocery store like Mollie Stone’s or Trader Joes

Mushroom Pizza Recipe


  • 2 Tablespoons of butter
  • 3 Tablespoons of extra virgin oil
  • 2 medium leeks – white part – quartered and sliced thinly 
  • 8 oz of Cremini mushrooms sliced thinly
  • 2 garlic cloves
  • 1 to 1.5 Tablespoon of fresh thyme, oregano, parsley minced. (sometimes I use just one of these herbs)
  • Monterey Jack cheese – ? cup


  • Place one minced garlic or through a garlic press in a small dish with one tablespoon of olive oil. 
  • Add one tablespoon of butter to a pan and sauté the leeks. Salt and pepper the leaks as they cook.  Remove from the pan and set aside.
  • Add one tablespoon of butter and one tablespoon of olive oil to the pan and sauté the mushrooms. Add salt as the mushrooms cook. Add garlic and cook about one minute more and remove from the pan and set aside.  Add some of the fresh herbs to the mushrooms. 
  • Spread out the pizza dough. Brush the top of the dough with the garlic and olive oil mixture.
  • Add the leeks, and half the cheese.
  •  Add the mushrooms and top with the rest of the cheese. 
  • Slide the pizza dough on to an oven 500 degrees on pizza stone or baking steel. 
  • When pizza is done, sprinkle the remaining herbs on top.
